Almond and meringue squares

  • 200 grams of ground almonds
  • 4 egg whites (L)
  • 2 egg yolks (L)
  • 1 cup of sugar
  • 3/4 cup plain flour
  • 3/4 cup self rising flour
  • 100 grams butter
  • 3-4 tablespoons of strawberry or plum jam

preparation method

Preparing the dough

Mix in the mixer with the guitar hook 2 egg yolks, softened butter, 1/2 cup sugar and 2 flour types, to a uniform dough

Form the cake
  • Flatten the dough in a mold (best way with the back of the spoon). The dough should cover the mold area without borders). .Soften  jam in  microwave for few seconds  and spread over of the dough
  • Scatter the almonds on the jam, evenly
  • .Beat the egg whites with 1/2 cup remaining sugar to a firm froth
  • Apply  meringue on top of the almonds
  • Bake in warmth oven for about 35 minutes
  • Remove from oven, chill and cut into squares
  • Serving suggestion -  insert each square into paper cupcake cup
